In professional kitchens, “86” means you’re sold out. No more. Nada. All gone. Back in our Sydney sandwich shop it was constantly in use because when the flavour hit right, our dishes flew. We were 86’ing sauces, sandwiches, the lot. That rush? That demand? It stuck with us. So when we recreated the mayo that started it all, we called it 86. Because it’s made to move.
